Baigan Fry

Ingredients:

pinch of turmeric (haldi) powder
1 big size baigan (eggplant)
3 tblsp red chilli (lal mirch)  powder
1/4 cup peanut (moong phali) oil  (tel)
2 tblsp besan
salt (namak) to taste

How to make Baigan/Brinjal/Eggplant Fry:
  • Cut the baigan into thin round slices.
  • Mix chilli powder, turmeric powder and salt thoroughly.
  • Heat up the frying pot with the peanut oil.
  • Take one slice of baigan at a time apply the mixture to both the sides and fry it.
  • Serve it hot with chapatis.
