Badami Aloo

Badami Aloo is a rich dish prepared from almonds and then stuffed inside the fried potatoes and served in a gravy.


For the almonds
16-17 whole almonds (badam)
1 tblsp ghee
Salt to taste
1/2 tsp white pepper
1/2 tsp garam masala
For the potatoes
8 medium sized, good shaped potatoes
Oil for deep frying
For the gravy
3 tblsp onion, ginger, garlic paste.
1 c tomato puree
1 tsp red chili powder
1/2 tsp turmeric (haldi)
1 tsp garam masala powder
1 tsp coriander powder (dhania)
Salt to taste
3 tlsp oil


How to make Badami Aloo:
  • First heat ghee in a pan and shallow fry the almonds.
  • Take off the heat and season with salt, pepper and garam masala.
  • Now peel the potatoes and deep fry them till they are golden brown in color.
  • Slice off one top of the potatoes and scoop out the flesh from inside.
  • Stuff in two almonds each and he put the cap back with the help of a tooth pick.
  • Now prepare the gravy by heating oil in a wok and putting the onion paste in it.
  • Once it starts changing color, you can add the tomato puree and all the ground spices.
  • Saute it well till the oil separates and the add half a cup of water or milk to form a thick gravy.
  • Arrange the potatoes in a serving dish and pour the gravy over them.
  • Garnish with fresh cream and serve hot with chapatis
