Baingan Lajawab

Baigan lajawab is a very relishing combination of baingan with soya granules. Easy to make so can be a part of every day menu.


8-10 baby brinjals

For Stuffing

100 gm soya bean granules
1 chopped small onion
100 gm chicken liver
1 tsp chopped garlic
2 tbsp oil
1 chopped small tomato
1/2 tsp jeera
1/2 tsp jeera
1/2 tsp red chilli powder
3-4 tbsp cheese (grated)
6-8 cherry tomato
1/2 cup grated paneer
2 tbsp chopped assorted nuts
1 cup Manchurian sauce
salt to taste


How to make Baingan Lajawab:
  • To Prepare The Brinjals
    • Cut each into 2 horizontally, scoop, apply a little salt and deep fry keep aside.
  • To Prepare The Filling
    • Heat oil, saute jeera, garlic, onion, soya granules, chicken liver, tomatoes, spices, salt to taste, cook for 8-10 minutes on a low flake, add cheese nuts, paneer and stuffing into the fried eggplants, top with grated cheese and bake for 10 minutes.
    • Serve the brinjals on a bed Manchurian sauce.
