Here is a simple recipe for kamal kakdi achar or lotus stem pickle.
1/2 kg thick kamal kakri (lotus stem)
1 tblsp rye powder
1 1/2 tsp turmeric powder
1 tsp red chilli powder
3/4 tblsp methi seeds
1 tblsp coriander seeds (crushed)
2 tsp kalonji
1 tblsp salt
3 tblsp mustard oil
- Peel, wash and cut kamal kakri into small pieces.
- Keep them in a hot water for 10 minutes.
- Dry them in the sun.
- Mix all the masalas and oil with kamal kakri pieces.
- Store in a glass jar.
- Note : Before adding oil to the pickle, first heat it till it starts smoking and then cool it. Only then add it to the pickle.
