Here is the recipe for kashmiri kofta curry. Kashmiri kofta curry is made by making balls of the minced mutton and then simmering it in the curry prepared with the given recipe and finally garnished with minced cardamom.
750gms lean minced mutton
3 green chillies, finely chopped and seeds removed
3 tblsp plain yoghurt
1 tsp ground ginger
1/2 tsp ground coriander
1 tsp chilli powder, or to taste
2 tsp garam masala
1 tsp sugar
1 tblsp milk powder
1 cup (250ml) warm water
1 tsp black pepper
1/2 tsp ground cardamom
- Combine minced mutton in a bown with chillies, 1 tblsp yoghurt, ginger, coriander, chilli powder, 1 tsp garam masal and 30gms ghree. Mix thoroughly and shape into small meatballs (koftas).
- Heat the rest of the ghee in a saucerpen. Add the sugar, milk powder, remaining yoghurt and garam masala, stir over heat for 1 minute.
- Add 1 /2 cup (125ml) warm water and the meat koftas. Simmer until the water has evaporated, turn the koftas and add another 1 /2 cup (125 ml) of warm water. Simmer until water has evaporated. Sprinkle with pepper and the ground cardamom.
