Mix Vegetable Sambar Recipe
Here's a tempting, flavoursome sambhar recipe with vegetables in it. Learn how to make mix vegetable sambar.
Ingredients:
1 cup split red gram (arhar dal)
2 tomato (tamatar)
3 onion (pyaj)
1 piece ginger (adrak)
2 green chilly (hari mirch)
1 brinjal (baingan)
1 cup bottle gourd pieces (lauki)
1 cup pumpkin pieces (kashiphal/kaddu)
1 drum stick
1 tsp finely chopped coriander leaves (dhania patti)
1 tsp mustard seeds (rai)
1/4 tsp turmeric powder (haldi)
1 tsp salt (namak)
2 whole dry red chilly (sookhi lal mirch)
2 tbsp sambhar masala
1 tbsp tamarind (imli)
10-12 curry leaves (kadi patta)
2 tbsp clarified butter (ghee)
How to make Mix Vegetable Sambar:
- Wash and soak dal for an hour.
- Soak imli in 1 cup water for an hour. And then strain to take out its pulp.
- Finely chop tamatar, pyaj, adrak, hari mirch separately.
- Cut all the vegetables into small pieces.
- Cook dal with salt, haldi and 4 cup water in a pressure cooker.
- After 1 whistle, cook at low flame for 15 minutes and then remove it from the flame.
- Heat ghee in a pan and put rai and sookhi mirch in it.
- Then fry onion until it turns light brown.
- Fry curry leaves, adrak and hari mirch in it.
- Then put tomato and cook until it softens.
- Then add sambhar masala and all the vegetables.
- Cover and cook at low flame.
- Then add imli pulp and dal along with 1 cup water.
- If required add more water because the consistency of sambhar should be quite thin.
- Cook at low flame for 15-20 minutes and then remove it from the gas.
- Garnish with dhania patti and serve hot.
