Okra Mandi

Okra mandi gives culinary delight of okra cooked with fried brinjal and potatoes. Learn how to make okra mandi.


6 green chillies
1 medium size onion
15 medium size okra
4 small size eggplant (brinjal)
1 small size potato
1 tsp mustard
2 tsp vegetable oil
1 tsp urad dhal
1 cup tamarind water

How to make Okra Mandi:

  • In a non stick skillet, heat the oil.
  • Add the okra and saute over medium heat for 5 minutes, until tender and soft.
  • In a kadai, put the oil, mustard seeds and urad dhal. After the mustard seed pops out, put green chilies & add chopped onion.
  • When onion turns golden, put okra, brinjal & potato. Fry for 10 minutes. Make sure the potatoes are fully done.
  • Then add tamarind juice with salt. Allow it to boil for 10 to 15 minutes.
  • When the desired consistency is reached shut off the fire and serve.
