Pistachio Ice Cream

Ingredients:

15 gms pistachios (Pista) chopped
1 cup sugar
3 tbsps condensed milk
3 1/2 tsp maida
3 1/2 cups milk
2 eggs
1 1/2 cups cream
1/2 tsp pista essence or vanilla essence
1 tsp green colour

 

How to make Pistachio Ice Cream:
  • Separate the eggs.
  • Whisk egg yolks and sugar with milk.
  • Add maida 2 spoons at a time and beat till soft and creamy.
  • Simmer on low heat stirring all the time to make sure no lumps form.
  • When mixture is thick remove and cool.
  • Refrigerate till half set.
  • Mix essence and green colour.
  • Whisk the cream over a bowl of ice cubes till soft peaks form.
  • Beat egg whites till firm and mix with cream.
  • Defreeze the half set mixture and beat well.
  • Add the egg mixture and essence, whisk till well blended.
  • Add half the nuts and re-freeze till firm.
