Mango Rice

Ingredients:

1/2 tsp mustard seed (rai)
8 – 10 curry leaves
1 cup rice (chawal)
1 tblsp peanut (mung phali)
1 tblsp coriander , chopped
salt (namak) to taste.
2-3 tblsp oil

For Masala:
2 green raw mango (aam) , peeled and grated
1 tsp cumin seed (jeera)
1/2 cup grated, coconut (nariyal)
1/2 tsp asafoetida (hing)
1/4 tsp fenugreek seed (methi dana)
1/2 tsp turmeric (haldi) powder
4-5 red chillies
1/4 tsp mustard seed (rai)

How to make Mango Rice:
  • Cook rice and let it cool slightly.
  • Grind all the masala ingredients to a smooth paste.
  • Heat up oil in a sauce pan, mix in mustard seeds, when it splutters, mix in peanuts and fry until lightly browned.
  • Mix in ground paste, curry leaves and salt.
  • Fry it for 5-10 minutes.
  • Take off from the heat.
  • Mix in rice, coriander leaves and mix well.
  • Serve warm or cold.
