Lavingya Paatra


Colocasia leaves 5
For the paste:
Bengal gram flour 1 1/2 cups
Whole wheat flour 4 tbsp
Fresh curds 3 tbsp
Turmeric powder 1/2 tsp
Sugar 3 tsp
Coriander 1 tbsp
Oil 2 tbsp
For the tempering:
Sesame seeds 1 tsp
Cumin seeds 1/2 tsp
A pinch asafoetida
Oil 3 tablespoons
For the garnish:
Coconut 2 tbsp
Coriander 1 tbsp

How to make Lavingya Paatra:
  • Chop the coriander.
  • Grate the coconut.
  • Wash and cut each colocasia leaf into 4 pieces. Mix together all the ingredients for the paste with a little water to make a smooth paste.
  • Place each piece of the colocasia leaf on a flat surface and spread some of the paste on it.
  • Fold to make small cylinders. Steam in a steamer for 15 minutes.
  • Prepare the tempering by heating the oil in a pan, adding the sesame seeds, cumin seeds and asafoetida and stirring for 30 seconds.
  • Toss the paatras in the pan and stir for a few minutes. Serve hot garnished with coriander and coconut.
